Spicy Black Bean Soup

My life is so crazy and so I don't resort to fast food and cold cereal most nights of the week I do alot of freezer cooking.  This recipe was a winner, which means it is healthy, easy, inexpensive and the kids all ate it.  The spiciness comes from the salsa, I used mild because the kids don't do spice but I think next time I will do medium.  I used a bag of dried black beans, and broth I made from the thanksgiving turkey.  We served it with tortilla chips and cheese.  Enjoy!!

SPICY BLACK BEAN SOUP


Freezer Recipe
2 16-oz black beans, drained and rinsed
1 1/2 cups vegetable broth
1 chunky medium salsa
1 tsp ground cumin

Combine ingredients in a blender, and blend until the soup is your desired consistency.
Freeze as a batch or in single serving sizes.
On cooking day:
Defrost soup, and heat in saucepan over low heat. Serve immediately.
